Production Process for Frozen French Fries Manufacturing
1. Washing and peeling process: washing and peeling the fresh potatoes with brush roller washer;
2. Cutting process: This machine is used to cut fresh potatoes into potato strips or slices, and size of strips can be 6mm*6mm, 8mm*8mm, 10mm*10mm. adjusted by clients.
3. Washing process: Washing process is for washing off potato starch on the frozen french fries which can keep it from fall in the oil and keep long-use life for the frying machine. At the same time, the frozen french fries is totally immersed in water which can keep it from enzymatic-oxydative browning.
4. Blanching process: Blanching is a necessary procedure. After washing, the potato French fries go into the blanching machine which is about 65-90 ℃hot water, which can destroy the enzyme activity, and improve and soften the organizational structure which can be easily dried and also can keep from blistering.
5. Frying process: The frying time is 2-3minutes at the frying temperature is 170-180 ℃.
6. Flavoring process: coating the products with different flavors.
